I think a food processor would work better than a stand mixer if you have one. I was told by my wife, a native New Mexican, that the less the dough is handled the better--just like pie pastry.

@Donna,
you can only roll it as wide as your roller but yes, you can hand stretch after rolling to get it larger - setting the roller thickness to be thicker gives you more room to hand stretch.

How large of a tortilla are you able to make this way. I love the whole idea of using a pasta roller but can't find one wide enough for a burrito sized tortilla. Do you hand stretch it to be larger after you roll it?

Thanks for the info! We used to love the Central Market tortillas but have recently been preferring thinner ones. The only store bought ones we eat are from Costco-- the ones you heat on a griddle to cook first. They are made with vegetable oil. We'll be trying this out soon with 1/4 or maybe even 1/2 wheat. Thanks so much.

You can substitute 1 tbsp veg. oil AND 1 tbsp baking powder for the veg. shortening. This would make it more of a Texas style tortilla - thicker, chewier. Set pasta roller thickness to '1'. Central Market in Austin uses butter for their in-house tortilla but I've never made it that way - it's rich and tastes very different than traditional tortillas.

To Kyla: yes, you can even substitute olive oil. if you google recipes you should be able to find one. I've been making tortillas for years with whole wheat flour and olive oil.

Do you think its possible to substitute oil or butter for the shortening? I've always wanted to try making tortillas and actually have a pasta attachment for the KitchenAid and never thought of this!
