Many fortune cookie recipes call for baking only a couple of pieces at a time so that you have time to shape the cookie before it cools. Baking time varies and can take up to 10 minutes. This is very time consuming. There’s a better way. I make my fortune cookies over the stove top, shape it, then bake all of them at once to make them crisp. The consistency of the batter is similar to a thicker crepe (or a runnier pancake) and you cook them the same way you would a crepe. By cooking over the stove top, the cookies aren’t as hot to handle, softer and easier to shape. Give it a try!
- Ingredients for about 20 cookies:
- 1 egg
- 1/4 cup sugar
- 2 1/2 tbsp butter, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2/3 cups flour
- 1/3 cup milk
- Directions:
- Make your fortune strips first and set aside.
- Cream together egg and sugar.
- Beat in butter and vanilla.
- Mix flour and baking powder together and pour it into the batter. Mix.
- Beat in milk.
- Heat a nonstick pan on medium low.
- Drop a spoonful of the batter and spread the mixture into a circular form using the back of a wooden spatula.
- Cook until lightly brown, about 30 seconds.
- Using another wooden spatula, flip and cook another 5 or 10 seconds.
- Lift the cookie with your hand (or use a spatula), insert fortune and gently fold in half, then hang it over an edge or a rim. The prettier side goes on the outside.
- When the cookies have cooled, lay them on a cookie sheet in a single layer. At this stage, they hold their shape but are still soft.
- Bake 250° for 15 – 18 minutes.
- Cool on a cooling rack.
